This simple recipe is perfect if you did not have the time to go grocery shopping, and can also prove to be an especially tasty aperitif. It is also great if you are growing cherry tomatoes at home, as this recipe can prevent you from wasting any of the fruits produced by Mother Nature. Putting home-grown tomatoes in the oven and combining them with maple syrup assuredly brings out their delicious flavor.

In the end, this recipe can be altered in many ways to meet your tastes. For instance, you could replace the goat cheese with any other type of cheese, such as cheddar or feta if you prefer. Ingredients such as nuts could also be added to the mix, as well as hot peppers if you are a fan of spicy foods. Fruits like baked apples or pears could also accompany this dish and balance its savory flavors. I highly suggest you try a different combination every time you make this recipe, as you could make the most amazing discoveries. After preparing the toasts, simply pair them with wine or aniseed if you plan to eat it as a snack before dinner.

Ingredients

  • 1 lb cherry tomatoes
  • 3 tbsp of pure maple syrup
  • 2 tbsp of virgin olive oil
  • 2 tbsp of chopped, fresh mint
  • Kosher salt and ground black pepper
  • 6 thick slices of country bread, toasted
  • 4 lbs of goat cheese

Instructions

1. Preheat the oven at 350°F. Place the tomatoes, maple syrup, oil and chopped mint on a baking sheet and season with salt and pepper.

2. Roast the tomatoes for about 25 minutes, or until tender and caramelized. Keep the roasting liquid in a small bowl.

3. Drizzle the toasts with roasting liquid. Spread with goat cheese and add the tomatoes. Top with a few mint leaves for serving.
