This is pretty much a healthier version of a tapioca. It gives you the same feeling in the texture, but it is way more nutritive and filling. Chia seeds are very filling and it is a great snack and breakfast if you do not want to eat a ton of different snacks that hold no nutriments. This is preferable to eating chewy bars and yogurts because the chia seeds will ensure that you are sustained for a longer period of time. It is great to eat this snack before a workout to have something light that still gives you energy for the effort. Also, it is made with things that we mostly always have in our home, so it is easy to make on the go, without having to buy anything additional. Unlike other homemade snacks that sometimes need to be made beforehand, this recipe is a on-the-go prepping, it is great even if you didn’t have time to prepare in advance.

If you are not a rice pudding lover, do not worry. Normally, I don’t like the texture of those desserts, but I love chia pudding. The seeds are smaller; therefore, the texture is not as disturbing in my opinion.

Moreover, according to many nutritionists, chia seeds have several benefits for our health. The have a lot of proteins and are considered to have antioxidant properties. When you buy them, they usually come in a big bag, and a little bit goes a long way, so it is a snack that is quite economic in the long term.

Ingredients

-6 tablespoons of chia seeds

-1 ½ cup of almond milk (or other type of milk)

-1/2 cup of pure maple syrup

-One ripe banana

Instructions

1. In a large bowl, incorporate chia seeds, almond milk and maple syrup. Mix it well so the chia seeds are coated in the liquid. Reserved.

2. With a fork, mash the banana until it is a smooth mixture. Add the banana to the seed mixture.

3. Separate in four portions and refrigerate during the night or for at least 3 hours until it has a pudding texture.

If you are in a hurry in the morning, it is possible to put vanilla yogurt in a dish, add chia seeds approximately according to your preferences, add a swirl of maple syrup and it will be possible to eat it by lunch. It is another way to make chia pudding when you are really in a hurry.

There are so many versions for this type of snack, you could also do it with coconut milk if you want a different taste. Again, the possibilities are endless and I encourage you to explore the different avenues. You can also garnish it like you want if you want to add nuts, fruits of granola even.
