Maple and bourbon pork ribs

While ribs are often reserved for Super Bowl parties, this recipe can in fact be eaten on any occasion. From evenings spent with friends to suppers enjoyed with your family, those maple bourbon pork ribs will be delicious any time of the year. I particularly enjoy their savory taste on colder days, as this recipe is a true comfort food. It warms the insides and makes you smile on cold winter nights, while thoroughly greasing your fingers. We do not hold it against them though, as those ribs are one of the best savory recipes that use pure maple syrup as an ingredient.

If you wish to enjoy this meal but are vegetarian, I have good news for you. The maple bourbon glaze can also be used as a sauce to many other foods, including vegetarian ones. For example, I heard this glaze is especially delicious when poured on top of some Portobello mushrooms, but you could also use tofu if that is what you prefer. This appetizing recipe can be enjoyed by almost anyone and can be creatively altered in more than one way.

Ingredients

Pork ribs:

  • 2 cups of malt vinegar
  • 2 liters of water
  • 6 bay leaves
  • 3 sticks of cinnamon
  • 1/2 cup of brown sugar
  • 1/4 of rock salt or table salt
  • 1 quartered brown onion
  • 2 kg of pork ribs

Maple bourbon glaze:

  • 1/2 cup of pure maple syrup
  • 1 cup of bourbon or whiskey
  • 1/2 of malt vinegar
  • 1/4 cup of Worcestershire sauce
  • 1 tbsp of Dijon’s mustard
  • 1 tsp of smoked paprika
  • 1 tbsp of sea salt flakes

Instructions

1. In a large saucepan, combine the seven first ingredients over high heat. Stir the mixture and bring to a boil.

2. Add the ribs and reduce to medium heat. Cover and let simmer for about 35 minutes, or until the meat has become tender.

3. While the ribs are cooking on the stove, place all glaze ingredients in a second saucepan over medium heat. Stir the mixture and bring to a boil.

4. Reduce the heat to low and let the glaze simmer for about 10 minutes, then set it aside.

5. Preheat the oven to 425°F (220°C).

6. Place the ribs meat-side down in a large oven dish and brush evenly with the glaze. Roast in the oven for 15 minutes.

7. Turn the ribs over and brush the meat side with the glaze. Roast for another 15 minutes.

8. Once fully cooked, top with the remaining glaze. Slice the ribs and serve.
