How to make maple butter at home

You’ve probably seen it in a sugar shack or at the grocery store along with other syrup products. Its smooth texture is almost as satisfying as its taste is delicious, and there is no better way to enjoy it than as is. Despite its name, this maple delicacy does not have any butter, nor should it. Indeed, many purists believe real maple butter should only contain one ingredient: maple syrup. If it is not the case, the butter does not follow the traditional recipe and is thus not considered to be true maple butter. A lot of cooks actually add cornstarch so the butter does not crystallize, but if the syrup is not heated too much it should not be necessary for this recipe. Of course, many recipes involving more ingredients might be tasty, but this one is as pure and simple as real maple syrup .

While maple syrup can be poured over some pancakes and waffles, this decadent butter is often spread on warm toasts. It can also be enjoyed with some muffins and biscuits, and even spread inside a dessert roll or on top of it – or both, if you truly like maple butter. It can also be used as an ingredient for dressings and meat recipes, for instance, but I find it especially delicious when paired with a dessert or breakfast. And even though it might not be the healthiest thing to do, you can always eat a spoonful of this delicious butter from time to time without feeling too guilty. Because it is such a great treat, it is the perfect gift to make for your friends and family, which will most likely appreciate the efforts you put into it. More importantly, they will love the rich taste and the small sugar rush brought by this wonderful maple butter.

Unlike our maple sauce recipe, this one is paler and thicker. The ingredients contained in the two of them are also different, which is why the result is not the same. As I mentioned, all you need to make maple butter is pure maple syrup , which is also found in the maple sauce, along with other things.

While the original recipe only requires two cups of syrup, you can always alter this amount depending on the quantity you wish to make. That is why this recipe is quite convenient. For example, you could stick to two cups if you only want to make maple butter for you and your close relatives. If you wish to gift small mason jars to your friends, though, using twice that amount of maple syrup could be a great start. Just keep in mind that the butter should be put in the refrigerator as it does not keep forever. You could also place it in the freezer for longer conservation.

It takes about 10 minutes of preparation and 12 minutes of cooking, and only requires a pot as well as two bowls. Also, a candy thermometer can be quite helpful when it comes to cooking maple syrup, since it will give you its precise temperature.

*Note: Do not stir the maple syrup at any point while it is cooking, as it can alter the result and you might not obtain the desired consistency.

Here are the few steps you need to follow in order to make this delicious butter:

1. Fill a large bowl with cold water and ice cubes. Put a smaller bowl on top of the ice, so a good portion of the bottom is immersed. That second bowl should be clean and empty.

2. In a pot, bring the maple syrup to a boil over medium heat. Cook until syrup temperature reaches 235 °F (112 °C).

3. Once that temperature is obtained, pour the hot syrup in the empty bowl. Let cool until the syrup reaches 100 °F (37 °C).

4. With a wooden spoon, stir the syrup constantly until its texture is smooth and its color is similar to that of tahini. (This step should take a while, don’t be surprised.)

5. Pour in an airtight container. Gift or enjoy!
